Boston Butts


I usually cook 4 to 6 butts at one time

Pre-heat Grill

Add wood chips to wood chip tray (I prefer Hickory)

Place butts (washed, salt & peppered) on cooking surface. Cook on high for one hour and lower heat to medium. Cook with lid closed without looking for 3 hours. Check with a meat thermometer for doneness, if not done close lid and cook for another hour.

The entire time I am cooking I keep adding chips for the smokey flavor I love. After finished cooking, take the butts and pull meat off the bone and mix on your favorite BBQ sauce and add a little more salt, pepper and a small amount of sugar.

Man, this is good BBQ! And I cooked it with Bubba's help and never once had to worry about a fire in the grill.
